The Story Behind ZOIL: The World’s First Zero Oil Kitchen, now in Gurugram

Suman Bharti - ZOIL

Gurugram has long been a hub for culinary innovation, but it recently welcomed a breakthrough unlike any other – the world’s first zero oil kitchen dedicated to North Indian cuisine, named ZOIL. This revolutionary venture is the discovery of Suman Bharti, founder of Gurgaon landmarks Reflex Bar Brewery and Dining, an uber-luxe restaurant and brewery and iluzn Club and Kitchen, the city’s hottest event venue, meticulously designed to transport one into a realm of enchantment and illusion, blending modern aesthetics with a mystical charm.

In 2012, Suman struggled with his weight and found himself at a critical health crossroads. With an alarming diagnosis of elevated cholesterol and high blood sugar, his doctor issued a stern warning: it was time to make a change. Determined to take control over his health, Suman embarked on his transformative journey, focusing on a simple principle. He said: “Our body is almost 70% of what we eat, 10% is driven by our mind, and the rest comes from exercise.”

His approach was centered on three simple yet effective principles: avoiding fried foods, minimizing carbohydrates and maintaining a consistent workout regime.

The results of Suman’s transformation journey were remarkable. Within six months, his weight dropped by 18kg and he regained control of his health. Today, at 46 years old, Suman successfully maintains a lean weight of only 68kg. This journey led to Suman asking himself the revolutionary question: “What if we could savour the rich flavours of India’s favourite dishes without using any oil?” Thus, ZOIL was born to prove that delicious food can coexist with health.

At ZOIL, it's about transforming how people eat. Suman envisions a world where health-conscious choices do not mean sacrificing flavour. ZOIL’s menu features a selection of hero dishes that exemplify this. From indulgent starters to hearty curries, each recipe is meticulously crafted using techniques that infuse flavour without the use of oil, making them heart-healthy and satisfying.

For those eager to experience this groundbreaking cuisine, the ZOIL menu is open for in-person dining at Reflex Bar, Brewery, and Dining in Gurugram. Additionally, the convenience of food delivery through platforms like Zomato and Swiggy ensures that healthy dining is just a click away. Customers can indulge in delightful dishes such as oil-free Tandoori Aloo Gobi, mouth-watering Tandoori Mushroom, guilt-free Makhmali chicken, and the ever-so-comforting chicken biryani, all designed to please the palate without compromising health.

With ZOIL, Suman Bharti is on a mission to redefine North Indian food, marrying culinary excellence with the principles of mindful eating. His journey stands as a testament to the possibilities that arise from determination and innovation. Now, Gurugram and its food enthusiasts can enjoy the rich, diverse flavours of North India, all without the sacrifice of health truly making ZOIL a culinary revolution worth celebrating.

ZOIL plans to expand to its own physical location in the city soon. Until then, diners can experience the heart-healthy food revolution on Zomato & Swiggy.
